  What's the narrative advantage of Dorcas being Severian's grandmother

It creates verisimiltude at least; Severian can raise the dead, but he does not walk around surrounded by a crowd of newly raised returnees.  Yet how would he discover he can raise the dead, if it does not happen?  The answer is that he inadvertently gets put in a place/position where he spontaneously raises one close to him.

I don't think it is vital or necessarily even important to the overall story that Dorcas is his grandmother.
